Rhubarb Patch

The Rhubarb Patch was planted in 2014 by our Solstice Community P-Patchers (Passionate People) working hard to plant ten Rhubarb crowns, some were contributed by members and other purchased from a West Seattle organic gardener.

Rhubarb Facts

26 calories in one cup, it is a vegetable, high in Vitamin K (for good bones), Vitamin C, Iron and Maganese.  The leaves are to be composted, not edible. Rhubarb has many varieties of color: Red (most popular), green and pinkish-green.

A Simple Recipe for Rhubarb Syrup

2 Cups sliced Rhubarb, 1 cup water, 1 cup sugar. Combine all three in a pan.  Heat over high heat until boiling, stir in sugar to dissolve.  Reduce to simmer and cook until Rhubarb breaks down, about 30 minutes.  Remove from heat and cool. Strain through a fine mesh strainer. Put pulp from strainer in cheesecloth and squeeze out as excess liquid.  Will keep for one week in the refrigerator, or can it.
